  • 1 Tbsp unsalted butter
  • 1 clove garlic ((minced))

  • ⅛–¼ tsp soy sauce ((optional; add if you used sake or white wine instead of dashi))
  • 2 Tbsp lemon juice
  • green onion/scallion ((finely chopped, for garnish))

Steps

  1. Gather all the ingredients.

  2. Use a knife to remove the meat from the shells of 5 baby abalone. Remove the abalone guts and heart.

  3. Clean the abalone with a tiny bit of salt under running water.

  4. Make some slits crosswise.

  5. Melt 1 Tbsp unsalted butter on the frying pan over medium heat.

  6. Add the abalone meat.

  7. Then, quickly add 1 clove garlic (minced).

  8. Lastly, add 2 Tbsp dashi (Japanese soup stock) and 2 Tbsp lemon juice. Turn the abalone and sauté for 1 minute. Do not overcook. Remove from the heat immediately.
