Resep Pempek Panggang
Indonesia offers many variations of pempek, including fried, steamed, and those served in fish broth. However, baked pempek is a particularly savory snack that doesn't include broth and instead features a terasi (shrimp paste) filling.

Instructions
- Puree the mackerel fish meat using a food chopper.
- Mix the mashed fish meat with water, salt and mashed garlic.
- Add sago flour, stir and knead the dough until evenly mixed.
- Take enough dough, coat the dough with sago flour so it doesn't stick, shape it into a flat round shape. Do this until the dough runs out.
- Bake the mixture until both sides are browned and cooked through.
- Filling: Roast ebi until dry, then puree. Mix with ground cayenne pepper and sweet soy sauce, stir well.
- Split the pempek into 2 parts, don't break them. Fill with filling ingredients. Do this until the dough runs out.
- Cuko: Mix all the cuko ingredients together, cook until it boils and the sugar dissolves.
- Serve grilled pempek with cuko.
