Ingredients

4 servings
  • 3 cups torn arugula leaves
  • ½ cup chopped bottled roasted red bell peppers
  • One 16-ounce can navy beans, (rinsed and drained)
  • ⅓ cup sliced red onion ((optional))
  • 1½ tablespoons white balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Steps

  1. In a large bowl, combine the salad ingredients.

  2. In a small bowl, whisk together all of the dressing ingredients until blended. Pour over the salad, tossing to coat.
