Instructions

  1. Clean the goldfish, remove scales, gills and entrails, then cut according to taste. Wash clean again with running water.
  2. Coat the fish with lime juice, leave for 10 minutes. Then rinse until clean, drain.
  3. Cook the water until it boils, then add the bay leaves, lime leaves, lemongrass and galangal.
  4. Coarsely grind all the spice ingredients, put them in boiling water.
  5. Add the goldfish, season with salt, stock powder and ground pepper. Cook over low heat until cooked and absorbed.
  6. Add sweet soy sauce and whole red bird's eye chilies, cook until the chilies wilt, turn off the heat.
  7. Serve with lime juice.
  8. Choose fresh goldfish so that it is not fishy and does not smell like mud.
