  1. 1. Wash the milkfish clean then split it wide without breaking. Discard the contents of the stomach. Drizzle with lime juice. Leave it for a moment then wash it clean again. Set aside. 2. Heat the oil then saute the ground spices until fragrant and cooked. Remove and cool. 3. Take the milkfish then coat it with the stir-fried ground spices until evenly mixed. Leave in the refrigerator for 1 hour. 4. Grill/grill the milkfish over hot coals until cooked on both sides. Lift. 5. Ready to be served with shrimp paste chili sauce.
  2. 1. Grind or puree all the chili sauce ingredients. 2. Saute the chili sauce until fragrant and cooked. Lift and transfer to a container. 3. Add lime juice. 4. Ready to serve.
  3. If you don't have charcoal, milkfish can be grilled in a flat, non-stick frying pan on the stove.
