Resep Nasi Uduk Betawi Komplit
Unlike regular white rice, Uduk rice is fluffy and doesn't have a sticky texture, and it has a distinctive, fragrant aroma due to being partially cooked in coconut milk and spices like kaffir lime leaves, galangal, lemongrass, and pandan leaves.

- 1. Wash the rice until clean, then steam until half cooked, set aside. 2. Boil coconut milk. Add bay leaves, ginger, galangal and salt, cook until boiling. Add the rice, stir then turn off the heat. 3. Keep stirring until the coconut milk is completely absorbed. Steam the rice for 30 minutes or until cooked.
- 1. Grind or finely crush the red chilies, cayenne peppers, garlic and peanuts. 2. Then pour in the hot water, vinegar, salt and sugar, stir until evenly mixed. 3. The chili sauce is ready to be served.
- 1. Puree the fried shallots and garlic. 2. Add mashed French fries, stir until evenly mixed. 3. Add spring onions, salt and ground pepper. Mix well. Taste and adjust the taste. 4. Shape the fritters mixture into balls with your hands, compacting them so they don't break when frying. Flatten then dip in beaten egg. 5. Fry in hot oil until golden brown. 6. Lift and drain. 7. The fritters are ready to be served.
- 1. Saute the ground spices until fragrant. 2. Add the tomatoes, bay leaves and lemongrass, stir until evenly mixed. 3. Add tofu and eggs, stir until evenly mixed. 4. Add sweet soy sauce and water, stir well and cook until slightly thick. Lift. 5. The stew is ready to be served.
- 1. Fry tempeh until dry. Set aside. 2. Fry sliced chilies, sliced shallots and sliced garlic. Fry each. Set aside. 3. Heat a little oil, saute galangal, lemongrass and bay leaves. 4. Add brown sugar, granulated sugar, tamarind water, salt and water, stir well and let it boil. Continue to cook, stirring until the sugar becomes thick. 5. Add dried tempeh, shallots, garlic and fried chilies, stir until all ingredients are evenly mixed. Lift. 6. Tempeh orek is ready to be served.
