- Cut and wash the meat into the desired shape.
- Grind all the spice ingredients finely.
- Put the ground spices into a pot or pan, then immediately add the coconut milk, water and meat.
- Stir continuously until thick, don't let the coconut milk break.
- While stirring, add the lemongrass, kaffir lime leaves, turmeric leaves, kandis acid and salt.
- Keep stirring until it dries and the color turns blackish brown.
- Don't forget to add cinnamon, star anise and cloves.
- It's ready to be served when the rendang is dry and the oil comes out.
