- Arrange the Marie Regal in rows first in the pudding mold, then mix the agar agar, water and sugar in a saucepan. Stir using a whisker until evenly mixed.
- Turn the stove on to medium heat, stir continuously until the pudding liquid boils.
- Turn off the stove, stir again until the pudding liquid is slightly warm and the hot steam disappears, then pour it in using a spoon little by little so that the regal biscuits don't float.
- Wait until it sets. While waiting for the first layer to harden, we make the second layer.
- Mix white coffee, clear agar, sweetened thick creamer and water in a saucepan, stir using a whisker until evenly mixed.
- Turn the stove on to medium heat, wait until it almost boils (don't let it boil) while continuing to stir so the milk doesn't split.
- Turn off the stove, while stirring quickly add the egg yolks, stir until evenly mixed.
- Turn the stove back on to low heat, cook the coffee pudding again for just a moment (don't need to boil it).
- Turn off the stove, stir gently until the steam disappears then pour over the first layer, wait until it sets.
- Cut into pieces and serve cold.
- For the second layer, you don't need to bring it to a boiling boil because then the milk will split.
