Instructions

  1. Clean the quail. Then coat with lime juice and a little salt. Let stand 15 - 20 minutes. Wash thoroughly again, then drain.
  2. Heat oil, saute ground spices, bay leaves, lemongrass and galangal. Stir until fragrant.
  3. Add water, season with salt, brown sugar and tamarind, stir well. Then add the quail, water until the quail is coated in spices. Cover the pan, simmer the quail over low heat until soft and the spices are absorbed. Lift.
  4. Grill the quail while smearing it with spice rub.
  5. Grilled quail is ready to be served with shrimp paste chili sauce and fresh vegetables.
  6. Don't stir too often so the quail doesn't fall apart.
