Instructions

  1. Wash the fish clean then coat with lime juice. Leave it for 10 minutes. Rinse until clean.
  2. Heat lots of oil. Fry the fish until brownish yellow. Lift and drain. Set aside.
  3. Heat the oil. Saute ground spices, bay leaves, lime leaves, galangal and lemongrass until fragrant.
  4. Pour in coconut milk. Stir until boiling.
  5. Add brown sugar, tamarind water and chilies. Stir well.
  6. Add pomfret fish. Stir well and cover. Cook until the sauce thickens and reduces. Lift.
  7. Ready to be served.
  8. Always choose fresh pomfret with the following characteristics: 1. Fresh red gill color. 2. The flesh is chewy and tough. 3. Has a distinctive smell of fresh fish or no strong fishy smell.
