Resep Lontong Balap
Legend has it that this Surabaya lontong dish originated when vendors raced each other on bicycles, hence the name "lontong balap" (race lontong). It’s generously topped with sliced lontong, fried tofu, and bean sprouts, all drenched in a fresh broth.

Instructions
- 1. Boil the garlic and cayenne pepper until cooked. 2. Blend the ingredients above. Add petis then stir well. 3. Heat the oil. Saute the chili paste until fragrant. 4. Pour in the water and stir until it thickens and explodes. Lift. 5. Ready to use.
- 1. Heat oil. Saute ground spices until fragrant. 2. Add soy sauce and oyster sauce. Stir well. 3. Pour in water. Season with salt, sugar and stock powder. Stir and cook until boiling. Correct the taste. 4. Add sliced leeks and celery. Stir quickly. 5. Add bean sprouts. Turn off the heat. 6. Ready to use.
- 1. Place the rice cake pieces and fried tofu on a serving plate. 2. Put bean sprouts on top. Drizzle with sauce. 3. Add petis chili sauce, sweet soy sauce and a sprinkle of fried onions. 4. Ready to serve.
- The amount of cayenne pepper can be increased or reduced according to taste.
