  1. Blend the chicken marinade, then coat the chicken that has been washed clean, let it sit for 15 minutes.
  2. Fry the marinated chicken until browned but not too dry, remove and set aside.
  3. Boil the tomatoes until soft, remove the skin then puree using a food chopper. Set aside.
  4. Grind all the spices using a food chopper until smooth. Then stir-fry with lemongrass, lime leaves, galangal and ginger until fragrant.
  5. Add the mashed tomatoes, cinnamon, star anise, cloves, stir well.
  6. Add the fried chicken. Pour in water, add tomato sauce and chili sauce, stir well.
  7. Add salt and sugar according to taste. Adjust until the taste is right, cook until the water is reduced and the spices are absorbed.
  8. Sprinkle with green onions, serve.
