  1. Wash the gourami fish and coat the entire surface with lime juice, salt and pepper. Leave it for a moment.
  2. Heat lots of oil. Fry the gourami until dry. Lift and drain. Set aside.
  3. Saute ground spices with lemongrass, galangal, bay leaves and lime leaves until fragrant.
  4. Pour in the water, tamarind water and brown sugar. Stir well.
  5. Add the fried fish and cayenne pepper. Stir well. Cook until the water reduces and is absorbed. Lift.
  6. Ready to be served.
  7. 1. Make sure the oil is really hot before adding the gourami fish to fry. This is important so that the fish does not stick to the pan. 2. So that the fish can be crispy, first fry the fish over medium heat until brown. After that, reduce the heat and continue frying until the fish becomes crispy and dry.
