This recipe creates a delicious and portable breakfast or lunchbox meal, featuring a rice dish with sambal potatoes, balado eggs, stir-fried green beans, and fried rice noodles – it’s incredibly tempting!

- Balado Potatoes: Fry the potatoes until cooked and tender, remove and set aside. Heat oil, saute ground spices, salam, lemongrass and galangal until fragrant. Add petai, water, season with salt, granulated sugar and stock powder. Cook until it boils. Add the fried potatoes, stir evenly, cook until the spices are absorbed and the water runs out.
- Balado Eggs: Fry boiled eggs until crusty, remove from heat, set aside. Heat oil, saute ground spices, lime leaves, bay leaves, lemongrass and galangal until fragrant. Add water, season with salt, granulated sugar and stock powder, cook until boiling. Add the eggs, cook until absorbed and the water reduces while continuing to stir well.
- Stir-fried Beans: Heat oil, saute shallots and garlic until fragrant. Then add the red chilies, green chilies, tomatoes, bay leaves and galangal, stir well until the spices are cooked. Add carrots, stir briefly. Add the chickpeas, stir until they start to wilt. Add water, season with salt, brown sugar and stock powder. Cook until cooked and all the sauce is absorbed.
- Kampung Fried Vermicelli: Bring water to a boil, boil the vermicelli until soft, drain. Heat the oil, saute the ground spices until fragrant, add the carrots and sliced cabbage, cook until half cooked, stirring continuously. Add oyster sauce, sweet soy sauce and stock powder, stir well. Add the vermicelli, stir until all the spices are evenly mixed and absorbed. Add the sliced spring onions, stir briefly, remove from heat.
- Prepare the rice that has been arranged on a plate, arrange the balado eggs, stir-fried green beans, potato balado and vermicelli neatly on each side. Serve with shrimp paste chili sauce.
- 1. You can make balado egg seasoning and balado potatoes at the same time. 2. Cook the eggs and balado potatoes first, and finally cook the stir-fried beans. Stir-fried green beans are best eaten just after they are cooked. 3. Add shrimp crackers if you like.
