Instructions

  1. In a pan, add coconut milk and pandan leaves. Boil while stirring until it boils. Remove and let warm.
  2. Beat the eggs and sugar with a mixer on medium speed until the sugar dissolves.
  3. Add potatoes, flour, sweetened condensed milk, salt and vanilla. Continue mixing at low speed, while pouring in the coconut milk little by little.
  4. Pour in melted butter. Beat well.
  5. Heat a mud cake pan. Spread with butter or margarine.
  6. Pour the mud cake mixture ¾ high into the mold. Cover the pan and let it cook over low heat until half cooked.
  7. Add raisins on top as topping. Cover again and continue cooking until cooked. Lift.
  8. Ready to be served.

Coated with non-stick material, the mud cake is guaranteed not to stick or be damaged. 2. You can adjust the topping ingredients to your taste, such as grated cheese, meises, dates or nuts.
