  • 4 tablespoons light coconut milk
  • 1 tablespoon crushed pineapple
  • 2 teaspoons sweetener or sugar of choice
  • 1/2 teaspoon rum or rum extract (optional )
  • 2 pieces of bread of choice
  • 3 tablespoons crushed pineapple
  • 1/2 tablespoon desiccated/shredded coconut
  • 2 tablespoons low-fat/fat-free cream cheese softened
  • 2 teaspoons sweetener or sugar of choice
  • 2 tablespoons light coconut milk
  • 1/2 teaspoon rum or rum extract (optional)

Steps

  1. TOASTS:

  2. Combine egg, coconut milk, pineapple, and vanilla in a bowl. Whisk well until combined.

  3. Soak bread in the egg wash until soaked.

  4. Heat a nonstick pan on low-medium heat and add the bread.

  5. Fry on each side until golden.

  6. In the meantime, make your cream cheese stuffing:

  8. When toasts are done, spread the cream cheese mixture over one piece and top with other toast to make a sandwich.
