  1. 1. Brew egg noodles with hot water until soft. Drain. 2. Saute the onion and garlic until fragrant and wilted. Add the sausage and stir briefly. Turn off the heat. 3. In a bowl, beat the eggs, salt and pepper. Add the noodles, spring onions and sautéed sausage then stir until evenly mixed. 4. Heat a flat, non-stick frying pan that has been smeared with margarine. Pour in the noodle mixture and spread evenly. 5. Cook over medium heat until the bottom is cooked, then flip and let the other side cook. Lift. 6. Ready to serve.
  2. 1. Make sure the bottom is cooked and hardened before turning it over so it doesn't fall apart. 2. Use medium heat which tends to be low so that the omelette can cook evenly all the way to the inside.
