  1. In a bowl, mix eggs, garlic, spring onions, salt and pepper. Stir well. Add the tofu slices. Stir gently until smooth.
  2. Heat oil for frying. Pour in ½ of the egg mixture. Cook until brown on both sides. Lift and drain. Do this until the dough runs out. Set aside.
  3. Grind and puree all the peanut sauce ingredients until the texture is thick. Transfer in a container. Set aside.
  4. Arrange the egg tofu, lontong and bean sprouts on a serving plate. Drizzle with peanut sauce. Sprinkle with fried shallots. Give crackers.
  5. Ready to be served.
