These soft sponge cakes are even more delicious when paired with sweet, plump dates. They’re exceptionally flavorful and satisfying!

Instructions
- In a bowl, sprinkle the chopped dates with 1 tablespoon of flour. Set aside.
- Beat butter and granulated sugar until pale and fluffy.
- Add the egg yolks one by one while continuing to beat until smooth.
- Add the flour, specoek, and ground cinnamon. Mix well and set aside.
- Beat egg whites until soft peaks. Add it to the cake mixture above in 3 stages. Stir until evenly mixed.
- Add the chopped dates. Stir again until smooth.
- Pour the mixture into a 10 x 22 x 7 pan that has been smeared with margarine and lined with paper.
- Bake the cake in the oven at 180°C for 45 minutes until cooked. Remove the cake and let it cool. Remove the cake from the pan and cut into pieces.
- Ready to be served.
- Date cake will be more delicious if enjoyed after 'staying' or keeping it overnight.
