  1. In a bowl, sprinkle the chopped dates with 1 tablespoon of flour. Set aside.
  2. Beat butter and granulated sugar until pale and fluffy.
  3. Add the egg yolks one by one while continuing to beat until smooth.
  4. Add the flour, specoek, and ground cinnamon. Mix well and set aside.
  5. Beat egg whites until soft peaks. Add it to the cake mixture above in 3 stages. Stir until evenly mixed.
  6. Add the chopped dates. Stir again until smooth.
  7. Pour the mixture into a 10 x 22 x 7 pan that has been smeared with margarine and lined with paper.
  8. Bake the cake in the oven at 180°C for 45 minutes until cooked. Remove the cake and let it cool. Remove the cake from the pan and cut into pieces.
  9. Ready to be served.
  10. Date cake will be more delicious if enjoyed after 'staying' or keeping it overnight.
