Resep Soto Banjar
Authentic Banjar soto uses cream to create a white broth, but you can omit it for a clear version. It’s typically served with rice cakes, cassava fritters, carrot slices, and duck eggs.

- Gravy sauce ingredients: Mix potatoes with mashed eggs. Stir until mixed evenly. Set aside.
- Complementary ingredients for the sauce: Saute the onions in butter until fragrant. Remove and set aside.
- Boil the chicken until cooked. Remove and let cool. Shred the chicken then add a pinch of stock powder. Then steam the shredded chicken for approximately 15-20 minutes. Remove and set aside. Also set aside the chicken bones.
- Saute the ground spices until slightly dry. Add cooking oil, stir, and cook until fragrant and cooked. Remove and set aside.
- Boil 5-6 liters of water. Add the chicken bones then add the ground spices, stir until smooth.
- Add cloves, star anise, cardamom, sugar, salt, creamer milk and additional sauce ingredients. Mix well. Adjust the taste. Continue to cook until the sauce boils again and is fragrant. Lift.
- Take a small pot of soto sauce above, add the sauce ingredients. Stir well. Cook on the stove until it boils. Add the fried garlic then turn off the heat.
- Serving: Prepare a large concave plate. Arrange the ketupat slices, vermicelli, carrots, shredded chicken, egg pieces, perkedel and celery. Drizzle with soto sauce, sprinkle with fried shallots, serve with kaffir lime slices and chili sauce.
