- Wash the meat clean, then cut into pieces, set aside.
- Puree the spices with a chopper or blender, shallots, garlic, ginger, red chilies, add a little water to make it easier to puree.
- Heat enough oil, saute ground spices, lemongrass and lime leaves until fragrant. Add the meat pieces, stir well.
- Add 400 ml water, season with salt, sugar, sweet soy sauce and tamarind juice. Cook until the water reduces, then add the remaining water.
- Cook until the water reduces then add the whole bird's eye chilies. Continue cooking until the water is gone, the meat is cooked, tender, and the spices are absorbed. Serve.
- 1. Don't cut the meat too thickly so that the meat becomes tender quickly. 2. If the meat is not really tender, you can add a dose of water.
