Instructions

  1. Boil the eggs until cooked. Peel the skin then fry in hot oil until the surface of the egg is crusty. Remove and set aside.
  2. Saute the ground spices in a little oil until fragrant.
  3. Add galangal, lemongrass, bay leaves and lime leaves. Mix well.
  4. Add eggs, stir gently. Add a little water or according to taste.
  5. Add tamarind juice, brown sugar, sweet soy sauce, salt and stock powder. Stir well then cook until the water reduces. Test and correct the taste.
  6. Remove and ready to serve.
