Instructions

  1. Cut the chicken into 4 parts then clean with running water until there is no mucus and dirt.
  2. Rub the spices all over the surface of the chicken.
  3. In a pan, add the chicken. Add water, galangal, lemongrass, bay leaves, lime leaves and sugar. Stir well. Cook over low heat while covered until it boils.
  4. Flip the chicken then pour in the sour water. Cook again until the water is almost gone. Lift.
  5. Prepare a grill (either using charcoal or a stove). Grill the chicken until brown on both sides. Lift.
  6. Ready to be served with chili sauce and fresh vegetables.
  7. Free-range chickens can be replaced with male chickens.
