Instructions
- Cut the chicken into 4 parts then clean with running water until there is no mucus and dirt.
- Rub the spices all over the surface of the chicken.
- In a pan, add the chicken. Add water, galangal, lemongrass, bay leaves, lime leaves and sugar. Stir well. Cook over low heat while covered until it boils.
- Flip the chicken then pour in the sour water. Cook again until the water is almost gone. Lift.
- Prepare a grill (either using charcoal or a stove). Grill the chicken until brown on both sides. Lift.
- Ready to be served with chili sauce and fresh vegetables.
- Free-range chickens can be replaced with male chickens.
