Resep Soto Tangkar
Soto tangkar is a traditional Betawi dish, named for the beef ribs (tangkar) used in it. It has a long history, dating back to the Dutch colonial era when the colonists would often spare beef ribs during celebratory feasts.

Instructions
- In a pressure cooker, boil the beef and beef ribs for 20 minutes until half tender. Remove and wash the meat. Discard the water.
- Boil the meat again (using a regular pan) in new water (1.5 liters) with cardamom, star anise, cinnamon and cloves. Set aside.
- Heat the oil. Saute ground spices with lemongrass, galangal, bay leaves and lime leaves until fragrant. Remove and add to the stew. Stir well.
- Slowly add the coconut milk, palm sugar and salt to the boiled meat. Stir well. Let the meat cook until tender. Turn off the heat.
- Remove and slice the meat small/thin.
- Arrange the ribs and meat in a serving bowl. Add sliced tomatoes, spring onions and celery leaves. Pour in the soto sauce and sprinkle with fried onions.
- Ready to be served with other complementary ingredients.
- 1. Meat can be boiled (the first time) using a regular pan for a longer time until it is half tender. 2. If you don't like fatty meat, you can use muscle/fat-free beef. 3.
