Resep Soto Sulung
Soto sulung features a filling of organ meats like tripe, lungs, and intestines, which should be boiled twice with separate water to remove any strong odor – cloves can also help with this.

Instructions
- In a pressure cooker, boil all the meat and offal for 20 minutes until semi-soft. Remove and wash the meat. Discard the water.
- Boil the meat again (using a regular pan) in new water (1.5 liters) with cardamom, star anise, cinnamon and cloves. Set aside.
- Heat the oil. Saute ground spices with lemongrass, galangal, bay leaves and lime leaves until fragrant. Remove and add to the stew. Stir well.
- Let the meat cook until tender. Turn off the heat.
- Remove and slice the meat and offal into small / thin pieces.
- Arrange the meat and offal in a serving bowl. Pour in the soto sauce and sprinkle with fried onions.
- Ready to be served with other complementary ingredients.
- 1. Meat can be boiled (the first time) using a regular pan for a longer time until it is half tender. 2. If you don't like fatty meat and offal, you can use muscle/fat-free beef.
