Instructions

  1. In a pressure cooker, boil all the meat and offal for 20 minutes until semi-soft. Remove and wash the meat. Discard the water.
  2. Boil the meat again (using a regular pan) in new water (1.5 liters) with cardamom, star anise, cinnamon and cloves. Set aside.
  3. Heat the oil. Saute ground spices with lemongrass, galangal, bay leaves and lime leaves until fragrant. Remove and add to the stew. Stir well.
  4. Let the meat cook until tender. Turn off the heat.
  5. Remove and slice the meat and offal into small / thin pieces.
  6. Arrange the meat and offal in a serving bowl. Pour in the soto sauce and sprinkle with fried onions.
  7. Ready to be served with other complementary ingredients.
  8. 1. Meat can be boiled (the first time) using a regular pan for a longer time until it is half tender. 2. If you don't like fatty meat and offal, you can use muscle/fat-free beef.
