  1. Wash the crab until clean, drizzle with lime juice. Leave it for 15 minutes. Meanwhile, puree all ingredients A with a food processor. Set aside.
  2. Heat water in a large saucepan. Boil bay leaves, lime leaves, lemongrass, salt and ginger. Boil until boiling then add the crab. Cook until the crab turns red.
  3. Heat some oil in a large frying pan. Saute the ground spices until cooked and fragrant. Add all ingredients B (except cornstarch) then add water and corn. Stir well and cook until boiling.
  4. Once the aroma is fragrant and the corn is cooked, add the cornstarch solution. Pour while stirring evenly.
  5. Add the crab and cook briefly until all the sauce coats the crab. Check the taste, if it's right, turn off the heat.
  6. Ready to be served warm.
  7. 1. Choose fresh crab that is still moving aggressively and its claws are still intact. Avoid crab that smells fishy or smells like ammonia. Fresh crab has no smell. 2. To make it easier to eat, the crab can be cut in half after boiling.
