  1. Chicken curry: Blend all the ground spices, then stir-fry with lemongrass, galangal and lime leaves until fragrant.
  2. Add chicken, stir well. Cook until the chicken changes color.
  3. Add coconut milk, season with salt and sugar until it tastes right.
  4. Cook over low heat until the chicken is cooked and the sauce thickens.
  5. Green Sambalado: Boil all the chili ingredients until soft, chilies, tomatoes and shallots. Then coarsely knead the chili sauce, add salt and sugar to taste. Saute briefly with cooking oil. The chili sauce is ready to be served.
  6. Arrange the rice on a serving plate, add boiled cassava leaves, Padang omelette, green sambalado and chicken curry along with the sauce.
