  1. Cut the chicken into 8 pieces. Wash it clean then coat all parts with lime. Leave it for 15 minutes. Rinse again with water until clean.
  2. In a large frying pan, boil the chicken with coconut water, ground spices, bay leaves, galangal, brown sugar, soy sauce, salt and tamarind juice. Stir well and cook until boiling. Correct the taste.
  3. Cover the pan and simmer until the chicken is tender and the water has reduced. Turn off the heat then let it cool.
  4. Heat lots of oil. Fry the chicken over medium heat until brown. Lift and drain.
  5. Ready to be served with chili sauce and fresh vegetables.
