This dish is inspired by Indonesian stir-fried capcay, but it’s cooked until very dry with a generous amount of sweet soy sauce, and features abundant slices of dried tofu.

  1. Kekian: In a container, combine all the ingredients then stir until completely smooth. Fry 1 tablespoon of vegetable mixture (like bakwan) in hot oil. Do this until the dough runs out. Lift and drain. Set aside.
  2. Heat the oil. Saute the shallots, garlic and candlenuts until fragrant.
  3. Add meatballs, liver gizzards and shredded chicken. Stir well.
  4. Pour in some water. Add carrots, Chinese cabbage, green mustard greens and cauliflower. Stir well and cover. Cook until vegetables are soft.
  5. Add salt, pepper, sugar and soy sauce. Stir well.
  6. Just before lifting, add the kekian and green onions. Stir well. Lift.
  7. Ready to be served sprinkled with fried onions, pickled cucumber and cayenne pepper.
