Instructions

  1. Cut the chicken into 12 pieces then wash until clean. Set aside.
  2. Saute ground spices until fragrant.
  3. Add galangal, ginger, bay leaves and lemongrass. Saute until cooked.
  4. Add the chicken, stir until the spices are evenly distributed. Cook until the chicken changes color.
  5. Add tamarind juice, palm sugar, honey, salt and water. Cook until the chicken is cooked and the water is absorbed. Lift.
  6. Grill the chicken over hot coals or using a flat non-stick frying pan, until brown. Occasionally rub the chicken with the spice rub. Lift.
  7. Ready to be served.
