Ingredients

  • 1 package Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
  • 2 medium sized zucchini, (sliced)
  • 2 medium sized yellow squash, (sliced)
  • 2 red bell pepper, (cut into chunks)
  • 1 red onion, (cut into chunks )
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

Steps

  1. Cut the pork tenderloin into 1 inch cubes. In a medium-sized bowl, add the zucchini, yellow squash, red bell pepper, and red onion.

  2. Add the olive oil and dried oregano, dried basil, dried thyme, dried rosemary, garlic powder, salt, and pepper and toss until coated.

  3. Thread the pork cubes on skewers along with the zucchini, yellow squash, red pepper, and onion. Grill for 8-10 minutes until the meat is done. The internal temperature should be 145 degrees Fahrenheit. Remove from the grill and serve.
