- 8 ounces chopped bacon
- 1 cup chopped white onion (about 1 small onion)
- 1 cup frozen peas and carrots
- 3 lightly beaten eggs
- 3 cups cooked white rice
- 2 teaspoons sesame oil
- 2 -3 tablespoons soy sauce (more to taste)
- chopped green onions (for garnish)
Steps
Add 8 ounces chopped bacon to a medium skillet or work. Cook over medium-high heat until the bacon is crisp, then remove with a slotted spoon and drain the grease, leaving about 1 tablespoon in the skillet.
Add 1 cup chopped white onion and 1 cup frozen peas and carrots to the skillet and cook over medium-high heat for 2-3 minutes until the onion is tender and translucent.
Slide the veggies to one side of the skillet, then add 3 lightly beaten eggs to the other side. Scramble the eggs until they are cooked through, and combine them with the veggies.
Add 3 cups cooked white rice and the reserved bacon to the skillet and combine them with the eggs and veggies. Add 2 teaspoons sesame oil and 2-3 tablespoons soy sauce, adding more to taste if you would like.
Stir until everything is heated through. Garnish with chopped green onions and serve warm.
