- In a bowl, mix all the chicken stir-fry ingredients. Stir well then let sit for 30 minutes. Set aside.
- Heat some oil. Saute ground spices with bay leaves, lime leaves and galangal until fragrant.
- Add chicken pieces. Stir well.
- Pour in water. Add salt, sugar, stock powder and soy sauce. Stir well then cook until the spices are absorbed and the sauce reduces slightly and thickens. Lift.
- Separate the chicken with the spiced sauce. Set aside.
- Boil water in a pan and add a pinch of salt. Add the kale and let it sit for just 30 seconds until the color turns light. Remove, drain and set aside.
- Arrange the noodles in a bowl. Add stir-fried chicken, kale and sliced spring onions. Drizzle with spiced sauce.
- Ready to be served.
- 1. Apart from dry noodles, you can also use wet noodles. Don't forget to rinse the wet noodles with warm water before using. 2. If you like thick noodle soup, you can add cornstarch solution when cooking stir-fried chicken. Cornstarch solution can also be added to the sauce after separating it from the chicken meat. 3. After removing it from the cooking water, rinse the kale with cold water so that the cooking process stops and the color does not turn black.
