Aceh noodles are spicy and a unique blend of flavors, drawing influences from Chinese, Indian, Middle Eastern, and other cultures – often described as “Serambi Mekah.” They can be prepared in two different ways.

Instructions
- Heat the oil. Saute the shallots, garlic and ground spices until fragrant.
- Add shrimp and squid. Stir well.
- Add bean sprouts, cabbage and tomatoes. Stir well and cook until wilted.
- Add yellow noodles, bay leaves and water. Stir well.
- Add soy sauce, vinegar, stock powder, pepper and salt. Stir well and cook until the water reduces. Correct the taste.
- Lastly, add the leeks and celery just before lifting. Lift.
- Ready to be served with pickled cucumber and emping crackers.
- 1. Seafood can be replaced with chicken, beef or goat. 2. To make it spicier, you can add dried chilies to the ground spices. 3. If you want Acehnese noodles with a little sauce, you can add 200 ml more water and cook only until the sauce thickens.
