  1. Wash the fish, drain and wipe with absorbent tissue to remove the water.
  2. Drizzle with lime juice and a pinch of salt, set aside.
  3. Prepare the spices: Puree the shallots, garlic, turmeric and candlenuts. Then mix with other seasoning ingredients (salt, coriander powder, sweet soy sauce, pepper powder, cooking oil, and lime juice), stir well.
  4. Coat the tuna with half the seasoning.
  5. Grill the tuna while turning and rubbing with spices until cooked.
  6. Ready to be served.
  7. So that the spices are more absorbed, the tuna can be soaked in spices overnight.
