Instructions

  1. Saute ground spices and other spices until fragrant.
  2. Add the shredded chicken, stir well. Add thick coconut milk.
  3. Season with sugar, salt and seasonings, taste test.
  4. Cook until the coconut milk reduces and the spices are absorbed, set aside.
  5. Prepare the leaves, put 1 bay leaf and 1 ladle of rice. Add basil on top.
  6. Also add shredded chicken on top, wrap and pin on the leaves.
  7. Burn the rice packets over hot coals/Teflon until the leaves are dry and fragrant.
  8. For those who are reducing their consumption of coconut milk, it can be eliminated or replaced with a coconut milk substitute.
