Ingredients

  • 2 lbs fingerling potatoes, washed and patted dry
  • 1 tablespoon olive oil
  • 2 teaspoons kosher salt
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 chipotle peppers in adobo sauce, finely minced
  • 2 g arlic cloves, minced
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon kosher salt
  • 1 teaspoon white wine vinegar

Steps

  1. Preheat the oven to 400 degrees. Place the potatoes on a large baking sheet and prick holes in each one with a fork.

  2. Drizzle them with oil and then use your hands to coat them thoroughly. Sprinkle the potatoes with salt.

  3. Roast the potatoes until they are fork tender, about 25 minutes. While the potatoes are cooking, whisk together the sauce. Transfer to an airtight container and chill until ready to serve. Enjoy!
