  1. Wash the meat clean, then cut into small pieces according to taste, set aside.
  2. Grind all the ground spices (onion, garlic, red chilies, candlenuts, coriander, ginger, galangal, nutmeg, cumin) using a chopper until smooth.
  3. Saute the ground spices until fragrant, then add the coconut milk, lemongrass, galangal, lime leaves, sugar and salt. Keep stirring the coconut milk until a little oil comes out and you can smell the aroma. Then, add the meat. Keep stirring until the coconut milk has reduced, after the coconut milk has reduced, adjust the taste.
  4. While waiting for the rendang to cook and turn black (while stirring occasionally), boil the spaghetti until soft and cooked, drain. Add the boiled spaghetti to the rendang which is cooked and dark brown in color, stir until evenly mixed. Cook briefly then remove from heat.
  5. Spaghetti Rendang is ready to be served.
