  1. Wash the chicken clean then cut into pieces according to taste.
  2. Blend all the ground spices, then boil the chicken in approximately 300 ml of water and the ground spices until the water is reduced and the spices are absorbed. Drain, then fry the chicken until cooked.
  3. Prepare the stir-fry spices, thinly slice the shallots and garlic, slice the red chilies and cayenne peppers. Chop the onion. Saute everything until fragrant, add a little water.
  4. Add the fried chicken then add ground pepper, sweet soy sauce, granulated sugar and a little salt. Stir well. Cook until the spices are absorbed and the water is reduced.
  5. Serve warm.
  6. Fry the chicken until cooked but not too dry so the chicken is not tough and remains tender.
