Instructions

  1. Slice the ginger, cut the onion into cubes, finely chop the spring onions.
  2. Blend shallots, garlic, chilies, tomatoes and 3 tablespoons oil until smooth.
  3. Cut sweet corn, boil briefly, drain.
  4. Heat 5 tablespoons oil, fry the shrimp briefly until fragrant, set aside.
  5. Heat a frying pan, saute ground spices until fragrant. Then add ginger, lime leaves and onions. Stir until wilted and the spices become more fragrant.
  6. Add oyster sauce, tomato sauce, chili sauce, stir well.
  7. Add the fried shrimp and boiled corn, stir well until coated with spices.
  8. Pour in water and cook until it boils. Add salt, granulated sugar and stock powder.
  9. Add cornstarch solution, cook until thickened. Add margarine, stir until melted and mixed evenly.
  10. Sprinkle with spring onions, remove from heat and ready to serve.
