Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • 8 ounces rotini (penne or other medium pasta)
  • 2 ½ to 3 cups chicken broth (or as needed, or water)
  • 1 (14 ounce each) can crushed tomatoes (or tomato sauce)
  • ¾ cup heavy whipping cream
  • ¾ teaspoon salt (or to taste)
  • ¼ cup shredded Parmesan cheese

Steps

  1. Heat oil in a large skillet over medium heat. Add the garlic, Italian seasoning, and red pepper flakes if using. Cook until fragrant, about 30 seconds.

  2. Stir in uncooked pasta, 2 ½ cups broth, crushed tomatoes, cream, and salt.

  3. Bring to a boil over medium-high heat. Reduce to a simmer and cook uncovered until the pasta is cooked through, adding more broth if needed*, about 14-18 minutes.

  4. Remove from the heat and stir in parmesan cheese. Let rest for 5 minutes before serving.
