Resep Es Pisang Ijo
Makassar’s signature dessert is “es pisang ijo,” a green-colored banana dessert made with a dough of flour, water, and natural green dye from pandan and suji leaves.

Instructions
- Apart from bananas, mix all the ingredients in one container. Stir well using a whisk until the mixture is smooth, then strain. Pour the mixture into a baking dish or other heat-resistant container.
- Heat the steamer/coasting pan. Steam the mixture for 15 minutes until cooked. Remove the baking sheet and let it cool, then wait until the steam disappears.
- Remove the dough from the pan, then knead until smooth. Divide the dough into 6 parts then flatten each one.
- Place the banana on the flat dough. Roll it up then pinch the two ends together. Repeat this step and do it until the dough is finished.
- Reheat the steamer/cooker pan. Cover the base with banana leaves or heat-resistant plastic. Steam the green bananas for 10-15 minutes. Remove and cool.
- Sauce: In a container, dissolve 200 ml coconut milk with rice flour then stir until smooth. In a saucepan, cook the remaining coconut milk with sugar, salt and pandan leaves until it boils, while continuing to stir gently. Pour in the coconut milk-rice flour solution, then stir continuously and cook until it thickens and explodes. Turn off the heat.
- Serve: Slice the green bananas and arrange them in a serving bowl. Drizzle with sauce. Add ice cubes, sweetened condensed milk and syrup.
- 1. When rolling/shaping green bananas, use banana leaves or clear plastic to make it easier to shape. 2. Pandan paste can be replaced with natural pandan leaf juice. 3. When steaming the dough, choose a steamer with a fairly large diameter so that there is enough baking pan. Like the Supra Rantang 3 Layers (See at Lazada DISCOUNT) which has a diameter of 24 cm. The body of the Supra pan is made of sturdy and quality stainless steel. So, ensure that the green banana mixture cooks evenly. 4. DHT syrup or Ambon banana syrup is a typical Makassar product. If you don't have it, you can replace it with cocopandan syrup or red syrup.
