- 3 cups uncooked rotini pasta
- 2 large tomatoes, (roughly chopped)
- 1 cup kalamata olives, (sliced)
- 1 cup canned artichoke hearts, (drained and quartered)
- 1 cup crumbled feta cheese
- 3 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 2 tablespoons mayonnaise
- 1 teaspoon granulated white sugar
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
Steps
Prepare the pasta according to the package instructions. Once the noodles are tender, drain them, run cold water through them until they are cooled; drain again.
In a large bowl, combine the pasta, tomatoes, olives, artichoke hearts and feta.
In a separate medium bowl, whisk together the dressing ingredients. Pour the dressing over the pasta and toss to combine. Cover the bowl with plastic wrap and refrigerate until ready to serve. Toss again prior to serving.
