  1. Rice: Put the rice that has been washed clean into the rice cooker. Add coconut milk, bay leaves, lime leaves, pandan leaves, lemongrass and salt. Cook until the rice is cooked.
  2. In a hot frying pan, fry the jengki anchovies until slightly browned and dry. Remove the anchovies. Reduce the oil to use when frying eggs.
  3. Omelet: Beat the eggs and salt. Pour into a heated flat pan, pour the eggs about ½ cm thick, let them cook evenly. Then roll the eggs and then slice them thinly.
  4. Shrimp paste chili sauce: Heat cooking oil, then fry the chili ingredients (except shrimp paste) until just wilted. Then puree all the chili ingredients, including shrimp paste. After that, saute all the chili sauce with a little oil. Set aside.
  5. Grilled chicken: Cut each chicken into 4 pieces, then wash and drain. Blend all the spices, once smooth, add them to a pan filled with a little water. Add the chicken and stir well. Cook until the chicken meat turns pale white then pour in the remaining water, cover the pan. Cook over a candle flame for 20 minutes or until it boils and the water starts to reduce. Open the pan and continue to cook over low heat for 30 minutes or until the water has reduced. Remove, let stand until the chicken heats up and cools to room temperature. Heat oil for frying. Fry the chicken until brown. Lift and drain. Fry the spiced crumbs over medium heat until dry and crispy, remove from heat, set aside.
  6. Serve fat rice with fried chicken, anchovies, omelet, chili paste, cucumber, fried onions, peanuts and shrimp crackers.
