- Heat coconut milk, sugar, salt and pandan leaves until boiling. Add the cornstarch solution, then stir until thickened. Remove then cool.
- Once cool, mix well with coconut water and young coconut slices, pour into an aluminum pan with a lid.
- Insert the aluminum pan into a larger pan, fill the gaps between it with crushed ice cubes and coarse salt. Rotate the aluminum pan in one direction for approximately 20 minutes. Take the frozen ice cream that is stuck to the side of the pan.
- Prepare a serving glass, take enough ice, add toppings according to taste.
- 1. Ideally, make ice cream using a special machine. If you don't have one, you can use 2 different sized pans, or a can with a lid. 2. If after turning it there is still some ice cream that is liquid, store it in the freezer for 1-3 hours to make it firmer.
