Instructions

  1. Bring water and salt to a boil. Boil sweet potato leaves and shallots until cooked. Remove then drain,
  2. Puree/grind the boiled shallots, chilies, brown sugar, shrimp paste and salt until smooth. Only then add the tamarind. Blend the chili sauce again.
  3. Arrange the boiled sweet potato leaves on a serving plate. Drizzle with chili sauce.
  4. Ready to be served.
  5. 1. Choose fresh and fully ripe tamarind. 2. If you want the sweet potato leaves to remain green, add ½ tsp baking soda when boiling the sweet potato leaves. Once cooked, immediately put the sweet potato leaves in ice water to stop the cooking process.
