Resep Barongko
This Makassar dessert resembles Javanese carang gesing, but it’s made by mashing in ripe bananas along with other ingredients before wrapping in leaves and steaming. It’s deliciously sweet!

Instructions
- Peel the banana then remove the middle or black seeds so that the barongko doesn't have black spots.
- Blend the bananas with coconut milk, eggs and granulated sugar gradually until smooth. Transfer the mixture into a container.
- Take 2 banana leaves then arrange/stack them together. Pour ½ cup of banana mixture into the banana leaf, then gently wrap it into a tum shape. Pin with toothpicks or sticks. Repeat this step until all the dough has been wrapped.
- Heat a steaming pan/boiler until steam appears. Steam the barongko for 25 minutes until cooked and the leaves look wilted and change color. Lift.
- Ready to be served.
- 1. Soften the banana leaves before using by heating them in a steaming pan where steam is coming out. Or you can also dry it in the hot sun. 2. If you are worried about the barongko mixture spilling, you can shape the banana leaves into a tum first, then pour the mixture and immediately pin it up.
