Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion (chopped into ½" pieces)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 30 ounces canned great northern beans (or (2) 15-ounce cans)
  • 8 ounces chopped green chile (about 1 cup, adjust for additional heat)
  • ¾ teaspoon kosher salt (adjust to taste)
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • 3 cups cooked chicken (cut into ½" pieces)
  • ¾ cup sour cream
  • ½ cup heavy cream
  • fresh limes (cut into wedges)

Steps

  1. In a large saucepan, over medium heat, heat the oil. Add the onion and garlic and saute for about 2 minutes, until fragrant. Add the broth, beans, chile and the spices. Bring to a boil. Add 3 cups cooked chicken.

  2. Reduce the heat and simmer uncovered for 5 minutes. Remove from the heat. Whisk together the sour cream and heavy cream, pour into the hot soup and stir to combine. Serve warm, with a squeeze of lime over each bowl, and the toppings of your choice.
