Ingredients

6 servings
  • 2 tablespoons extra-virgin olive oil, (divided)
  • 20 ounces boneless, skinless chicken breast, (cut into cubes)
  • 2 teaspoons oregano
  • 8 ounces sliced mushrooms
  • 2 tablespoons butter,
  • ¼ cup white wine
  • ½ teaspoon garlic powder
  • 16 ounces fresh linguine noodles
  • 6 ounces crumbled feta cheese
  • One 14-ounce can artichoke hearts, (drained and sliced)
  • 4 slices , cooked and crumbled bacon
  • One 3.8-ounce can sliced olives, (drained)
  • ¼ cup pine nuts, (toasted)
  • salt and freshly ground black pepper, (to taste)

Steps

  1. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the chicken and oregano, and sauté until lightly browned and cooked through. Remove the cooked chicken from the skillet and set aside.

  2. In the same skillet, melt the butter and add the mushrooms, wine and garlic powder and heat over medium. Sauté until the mushrooms are softened.

  3. Cook the pasta according to package directions. Drain the pasta and place in a serving bowl. Toss with the remaining tablespoon of olive oil.

  4. Add the feta cheese, artichoke hearts, bacon, olives and pine nuts. Toss with the pasta, and season to taste with salt and pepper. Serve immediately.
