Ingredients

10 servings
  • 32 ounces nonfat plain yogurt ((to make yogurt cheese))
  • 1 medium cucumber, (peeled, seeded, grated, and squeezed dry)
  • 2 medium garlic cloves, (minced)
  • 4 teaspoons extra virgin olive oil
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon freshly squeezed lemon juice
  • ½ teaspoon salt

Steps

  1. Spoon the yogurt into a large coffee filter or a cheesecloth-lined strainer; set over a bowl and let stand in the refrigerator for 2 hours or overnight. Discard the liquid. The solids that remain are the "yogurt cheese."

  2. Combine the yogurt cheese, cucumber, garlic, oil, dill, lemon juice and salt in a bowl. Mix well and enjoy!
